Pavlova recipe

Ingredients
Pavlova
- 4 egg whites, room temperature
- 1 cup granulated sugar
- 2 tsp lemon juice
- 1tsp Vanilla extract or any other extract of your choice
- 2 tsp cornstarch
- Fruits of your choice
Passion fruit whipped cream
- 2 -3 passion fruits/maracuja
- 2 tbsp water
- 1 tbsp granulated sugar
- 1 1/2 cups heavy cream, cold
- 3 tbsp powdered sugar
- 1tsp vanilla extract
Instructions
- Pre-heat oven at 265'F and line a cookie sheet with parchment paper.
- Place your bowl on your stand mixer with your whisk attachment. Start wisking your egg whites on low add your sugar 1 tbsp at the time.
- Whisk the eggs until the sugar has completely dissolved. You will know when it is ready, when you don't feel any grains of sugar between your fingers.
- Continu whisking until you get stiff peaks.
- Add lemon juice and vanilla extract. Whisk until well combined.
- Using a spatula, fold in the cornstarch.
- Place a small amount of meringue between the parchment paper and the cookie sheet. This will keep the parchment paper in place.
- Transfert the meringue onto the parchment paper. Create a dome shape and a crease in the middle.( this will be for your filling)
- Place your sheet in the middle rack of your oven and bake for 1 1/2-2 hours
- Turn off the oven, crack the door open and leave it inside until the oven has completely cooled off.
- Cover the top with passion fruit whipped cream topped with fruits of your choice.
- Pour the remaining passion fruit liquid juice on top of fruits.
- Sprinkle with powdered sugar.
Passion fruit whipped cream
- Cut your passion fruits in half. The more wrinkles they have the sugary they will be.
- Scoop the inside with seeds and place it in a food processor with water and granulated sugar. (this will create a liquid juice)
- Whisk the cream and 2 tbsps of passion fruit juice until stiff peaks form.
- Gradually add powdered sugar and vanilla.
