today, I wanted to share with you one of my favorite recipes, mini pineapple turn over cake. This dessert is easy to make, it is light, full of flavours and simply delicious.

INGREDIENTS:
cake
1 vanilla cake mix
3 eggs
1/3 cup unsweetened apple sauce
3/4 cup milk
1 can Dole pineapple slices (reserve juice)
3/4 cup pineapple juice
caramel
1 cup granulated sugar
1 tbsp water
 STEP 1
Drain pineapple and reserve the juice
STEP 2 
Grease your ramekins using unsalted butter.
STEP 3
Add milk, pineapple juice, eggs and apple sauce to your cake mix. Mix until well combine.
STEP 4 
Caramel
Place the sugar in a medium size pot. Pour the water in the middle. Let it cook on medium heat. Your sugar will start melting and turning into a golden color. Stir continuously until it is completely melted and has thickened. If it smells burned, its because the heat is to high and your caramel has burned, you will have to start all over again. ***Be extremely careful because you can seriously burn yourself. Never ever touch the sugar***  
STEP 5
Once melted, poor the caramel into the bottom of each ramekins.***You just want to cover the bottom*** Set aside while the caramel hardens. To wash your pan, simply fill up the entire pot of water and let the sugar dissolve on it's own. Place drained pineapple over caramel.
STEP 6
Fill up 3/4 of the ramekins with your batter. Place them onto a baking sheet and bake 20 minutes at 350F until an inserted toothpick comes out clean.
STEP 7
Let them cool 5 minutes. Carefully loosen the edges with a knife. Place a small plate over the ramekin and invert.
