INGREDIENTS:
- 1 cup unsalted butter, room temperature
- 1 1/2 cup icing sugar
- 1 egg, room temperature
- 3 tsp almond extract
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- Isomalt
- Edible pearls
- to decorate: fondant, modeling chocolate or icing
Step 1
Preheat the oven at 400 degrees
Step 2
Sift flour and baking powder and add salt. Set aside
Step 3
Using an electric mixer, cream both butter and sugar together until nice and fluffy.
Step 4
Add the egg, mix until well combined. Then, add your almond extract
Step 5
Gradually add your flour mixture.
Step 6
Mix until you can't no more.
Step 7
Transfer your dough onto a clean counter and knead it.
Step 8
Roll dough evenly in between 2 parchment papers.
Step 9
Place your middle shape first, then place the round cutter making sure it is centered.
Step 10
Remove the dough in the middle. Bake 8-9 minutes until lightly brown. Cool completely on a cooling rack.
Step 11
Melt Isomalt on medium heat. Make sure to be very very careful not to burn yourself. **Never ever touch the product once melted. Do not do this step, with kids around**
Step 12
Turn your cookies up side down onto a silicone mat on top of a cookie sheet. Very important to use a silicone mat because once melted the Isomalt is extremely hot. Fill in the middle part of your cookies, making sure to fill in all the corners.
Step 12
Fill the inside with edible pearls.
Step 13
Place buttercream or icing on each corners. Sandwich two cookies together.
Step 14
Decorate with fondant, modeling chocolate or icing.
