Hi guys,
here is a perfect recipe for all cheesecake lovers. When I make this recipe for my guests, a second serving is always in demand. This cake is so yummy and full of wonderful flavours perfect for fall season. It has a nice thin graham crust, followed by a simple cheesecake which is topped with apple filling and the perfect crumble topping over that. It's a little bit time consuming BUT well worth it, trust me on this one.

Ingredients:

Streusel topping:
  • 1/2 cup of all-purpose flour
  • 1/2 cup old fashioned oats
  • 1/2 cup packed brown sugar
  • 1/4 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/3 cup unsalted butter, room temperature diced into cubes
Crust:
  • 2 cups graham cracker crumbs
  • 1 cup of butter softened, room temperature
  • 1/2 tsp ground cinnamon
  • 1/2 cup brown sugar
 Apple filling:
  • 3 honey crisp apples, slice in thin layers (you may also use granny smith)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp granulated sugar
Cheesecake:
  • 3 pkg cream cheese softened (room temperature)
  • 1/2 cup granulated sugar
  • 1 ½ tsp vanilla extract
  • 3 large eggs (room temperature) 
  •  Step 1
    TOPPING
    In a medium size bowl, combine all the topping ingredients; flour, oats, brown sugar, cinnamon, baking powder and butter. Mixt with a fork or clean hands until they become crumble. Chill in the refrigerator.
     Step 2 
    CRUST
    Preheat oven at 350' F
    Cover a 9X13 cake pan and line with aluminium foil.
    Step 3 
    In a medium size bowl, combine graham crumbs, butter, cinnamon, brown sugar. Mix until texture resemble like wet sand. 
    Step 4
    Press firmly with a spoon at the bottom of your cake pan. Bake in the oven 10-12 minutes or until the crust becomes golden brown. Let it cool.
     Step 5
    Apple filling
    In a medium size bowl, Stir appels, cinnamon, nutmeg and sugar until apples are completely coated. Set aside. The apples will create natural juice from the sugar.
    Step 6
    Cheesecake
     
    Using an electric mixer, beat cream cheese, sugar and vanilla together on medium speed. Reduce to low speed and add eggs one at the time. Mix until all is combined. Don not over mix.
     Step 7 
    Poor cheesecake mixture over the graham cookies and spread evenly.
     Step 8
    Give you apples one last stir and spoon them evenly over your cream cheese mixture.
    Step 9
    Sprinkle the top with your refrigerated crumbles. Cover evenly. Bake for 40-45 minutes, or until filling is set. Cool at room temperature for 30 minutes then refrigerate for 4 hours.
