Hi guys,
hope you are having a good week so far. In this weeks recipe, I will show you how to make a Tiramisu cake wrapped with delicious chocolate wafer sticks. This recipe is a little time consuming but can be made in advance. It is light, delicious and very tasty. I hope you will enjoy it as much as we did.

Ingredients:
Pastry cream
2 cups milk
1/4 cup heavy cream
1/2 tsp vanilla extract 
4 egg yolks
3/4 cup granulated sugar
2 tbsp. all purpose flour
1/4 cup cornstarch

475 g mascarpone cheese
Simple syrup
3/4 cup espresso coffee
1/4 cup Amarula
1/4 cup granulated sugar
Cake
2 packages of vanilla cake mix
2 ½ cups milk
1/2 cup + 2tbsp apple sauce (unsweetened)
6 Eggs
chocolate wafer sticks 

Pastry cream
Step 1


  Bring to a boil milk, cream and vanilla extract.
Step 2
In a separate bowl, whisk together egg yolks and sugar until it because light yellow. 
 Step 3 
Add your flour and cornstarch. Whisk until well combined.
Step 4
Pour 1/4 of the hot milk through a strainer into your eggs mixture. Wisk until no more lumps. Then, pour the rest of your hot milk and whisk again until well combined.
Step 5
Bring your egg mixture back to the stove and continuously whisk until it because thick. (Almost like pudding)
Step 6  
Transfert your mixture into a medium size bowl. Cover with plastic wrap and chill for at least 2 hours before using in the refrigerator.
  Step 7 
Once cooled, whip the pastry cream with the mascarpone until well combined and refrigerate until needed.   
Simple syrup
Step 8

In a medium size bowl, combine, espresso coffee, Amarula and sugar. Mix until sugar is completely dissolved. Set aside.
Cake
Step 9
Preheat oven at 350' F.
 Step 10
In a mixing bowl, combine cake mix, milk, apple sauce and beat with an electric mixer. Add one egg at the time and continu beating until well combined. (don't over beat)
Step 11
Pour your cake mixture in  2 cake pans lined with parchemin paper. Bake 30-35 minutes or until an inserted toothpick comes out clean.
Step 12 
Cut your cakes in half so you have 4 pieces. Transfert them to a cooling rack and let them completely cool off.
Step 13 
Brush simple syrup on top of each cakes.

Step 14 
Place the first cake onto a cake platter. Top with 1/3 of your pastry cream mixture. 
Step 15  
Place another cake layer on top and cover with chopped chocolate.
Step 16 
 Place your 3rd layer over your chocolate and top with 1/3 the pastry cream.
Step 17
Cover the sides with a thin layer of pastry cream.Step 18

Place the chocolate wafer sticks all around your cake.  Wrap a ribbon around your cake to hold everything in place.
Step 19 
Cover with the remaining pastry cream. 
Step 20 
Sprinkle the top with cocoa powder
  Step 21 
Make chocolate curls using a vegetable peeler. Cover the entire top with chocolate curls. Refrigerate over night for a more flavored cake.
