hope you had a great week. In this weeks recipe, I will show you how to make Sicilian cannoli shells from scratch without the tubes. Yup you read well, from scratch. They look intimidating but are actually very simple to make. Also, have a look at my yummy recipe for the ricotta filling, the link will be at the end of this blog.

Ingredients:1 cup all purpose flour, sifted
2 tbsp granulated sugar
1 tsp cocoa powder
1/2 tsp ground cinnamon
1/2 tsp expresso coffee grains
1 ½ tbsp unsalted butter, room temperature
1 egg
80 ml Marsala wine
1 egg white
Step 1
In your mixing bowl, combine, flour, sugar cocoa powder, cinnamon and coffee mix until well combine.
Step 2
Add your egg and butter to the mixture. Mix until well combine on medium speed, using your dough attachment paddle.
Step 3
Gradually add your marsala wine. Continu mixing until you can't no more.
Step 4
Transfert your dough to your working surface and knead your dough until smooth. You will notice also that it will become a nice golden brown.
Step 5
Cover your dough with plastic wrap and let it rest for 1 hour.
Step 6
Meanwhile, if you don't have cannoli tubes you can actually make some with paper foil. If you don't want to use paper foil, here is a link to purchase the tubes. https://amzn.to/2Md89yH
Step 7
Divide your dough into equal parts. Roll your dough and thin it out using your pasta machine. (https://amzn.to/2VVi949 ) Start with the biggest number and work your way down.
Step 8
Using a round cookie cutter (a little bit smaller then your tubes), cut out numerous pieces.
Step 9
Place your foil tube in the middle of your dough and glue each end by brushing a small amount of egg white.
Step 10
Heat the shortening in a medium size pan until it completely melts.
Step 11
Fry your shells maximum 2 at the time, until they are nice and golden. Transfer them on to paper towel so that it absorbs the extra oil.
Step 12

You can also, dip each ends into chocolate chips or nuts.
