hope you had a great week. In this weeks delicious recipe, I will teach you how to make the best mini pecan pies. If you like desserts with nuts, this is it OMG these are so good. You can make them into mini pies witch is perfect when you have company over but you can also make them into 1 big pie. What I like about these, is that they can be frozen for up to 2 months in a freezer bag or a container.

20 Mini frozen pies store-bought
3 eggs
1/2 cup granulated sugar
1/4 cup brown sugar
1 cup light corn syrup
1 ½ tsp vanilla extract
4 tbps unsalted butter, melted
1 ½ cup pecans
Step 1
Preheat the oven at 350' F
Place your frozen pie tarts on top of a cookie sheet. Let them defreeze for at least 15 minutes at room temperature, set aside.
Step 2
Using your electric mixer, beat eggs and sugar until smooth.
Step 3
Add, corn syrup, vanilla extract and melted butter. Mix until well combine and sugar is completely dissolved.
Step 4
Fill your crusts with pecans add pour the sugar mixture over them.
Step 6
Bake for 25-30 minutes or until the filling is set. Let them cool on the cookie sheet for at least 10 minutes. Transfer them onto a cooling rack and let them cool completely.
