Hi guys,
hope you had a great week. In this weeks recipe, I will show you how to make a Portuguese dessert delicacy called Bolas de Berlim. Oh yeah!!!!!!!!!!!!!! This is so so so so good. Did I say it was good? It is delicious. This dessert is basically, a doughnut  with pastry cream on the inside. I hope you enjoy it as much as a have growing up!

Ingredients:
Pastry cream
2 cups milk
1/4 cup heavy cream
1/2 tsp vanilla extract 
4 egg yolks
3/4 cup granulated sugar
2 tbsp all purpose flour
1/4 cup cornstarch

For the dough
1 package active yeast
2 tbsp. granulated sugar, divided
1½ cups warm milk
1 cup unsalted butter
2 egg yolks
1 pinch of salt
5 - 6 cups all purpose flour
granulated sugar for covering
vegetable oil for frying
Step 1
Pastry cream
  Bring to a boil milk, cream and vanilla extract.
Step 2
In a separate bowl, whisk together egg yolks and sugar until it because light yellow. 
 Step 3 
 Add your flour and cornstarch. Whisk until well combined.
Step 4
Pour 1/4 of the hot milk through a strainer into your eggs mixture. Wisk until no more lumps. Then, pour the rest of your hot milk and whisk again until well combined.
Step 5
Bring your egg mixture back to the stove and continuously whisk until it because thick. (Almost like pudding)
Step 6  

Transfert your mixture into a medium size bowl. Cover with plastic wrap and chill for at least 2 hours before using in the refrigerator.
  Step 7  
Donut
 
Heat the milk in the microwave.(don't make it to hot or else the yeast wont activate). Add 1 tbsp. of sugar to your milk and the yeast package. Mix until well combined. Set aside until it activates. You will notice that it will start to get foamy and brown.
Step 8
Once the yeast is foamy add the rest of your sugar and mix until well combined
Step
Transfer your mixture to an electric mixer with a dough attachment mix in butter and egg yolks until well combine. Gradually add flour and salt. If you don't have such machine, no worries simply add your flour gradually into your liquid and mix by hand with a wooden spoon.
Step 4
Continu mixing until it becomes a ball of dough and can not be mixed with the machine or by hand anymore.
 Step 5 
Transfer your dough to your counter sprinkled with flour and knead it until it is nice and smooth (about 6-8 minutes)
 Step 6 
Divide your dough in 6 equal parts. Form ball shapes and transfert them onto a cookie sheet lined with parchment paper sprinkled with flour. Cover them with a clean cloth and let them rise for about 2 hours.
 Step 7 
Fry your dough one by one in a deep fryer or pot until they are golden brown.  Be careful when using oil, not to burn yourself.
 Step 8
Once fried, transfert them to a plate cover with paper towel so that it absorbs the extra oil.
Step 9
Roll them in sugar making sur that the enter ball is covered. Let them cool completely.
 Step 10
Cut them half way and fill them with your delicious pastry cream.
