Ingredients:
2 cups of heavy cream
1 vanilla bean
1/2 cup granulated sugar
5 egg yolks

Step 1
Preheat oven at 325' F.
Step 2
In a medium size saucepan, heat the heavy cream with the vanilla bean on medium. Allow to come to a simmer for about 6-8 minutes. (cut the vanilla bean in half, remove the beans and place both peel and beans in you milk.)
Step 3
Strain your mixture in another bowl and let it cool down.
 Step 4
Meanwhile, using your electric mixture, whisk your eggs yolks until it starts to lighten in color. Gradually add your sugar.
Step 5

Gradually pour the hot heavy cream into the egg yolks while continuously whisking to prevent your eggs from cooking. (or else you will have scramble eggs)
 Step 6
Poor your egg mixture into your ramekins or soufflé dish
Step 7
Transfert all your ramekins OR your soufflé dish into a larger oven proof deep pan. Fill the pan with water until it goes halfway up to the sides. Bake 40-45 minutes until the mixture has set but still jiggly in the center. Remove the ramekins from the pan and refrigerate for at least 4 hours.
Step 8
Sprinkle the tops with 1 tbsp. of fine sugar covering the entire surface and caramelize the top using a kitchen torch.

Enjoy!
