2 cups of heavy cream
1 vanilla bean
1/2 cup granulated sugar
5 egg yolks
Preheat oven at 325' F.
In a medium size saucepan, heat the heavy cream with the vanilla bean on medium. Allow to come to a simmer for about 6-8 minutes. (cut the vanilla bean in half, remove the beans and place both peel and beans in you milk.)
Strain your mixture in another bowl and let it cool down.
Meanwhile, using your electric mixture, whisk your eggs yolks until it starts to lighten in color. Gradually add your sugar.
Gradually pour the hot heavy cream into the egg yolks while continuously whisking to prevent your eggs from cooking. (or else you will have scramble eggs)
Poor your egg mixture into your ramekins or soufflé dish
Step 7Transfert all your ramekins OR your soufflé dish into a larger oven proof deep pan. Fill the pan with water until it goes halfway up to the sides. Bake 40-45 minutes until the mixture has set but still jiggly in the center. Remove the ramekins from the pan and refrigerate for at least 4 hours.
Sprinkle the tops with 1 tbsp. of fine sugar covering the entire surface and caramelize the top using a kitchen torch.
