Tiramisu cupcakes recipe

One of my favorite desserts to bake for the holidays are Tiramisu. Why not make it in a size bit. Tiramisu cupcakes, oh yeah you read right! These are so delicious, with a tiramisu filling on the inside, drizzle of espresso with Kahlua alcohol topped with fresh whipped cream filling. OMG! you have to try these.

1 package of vanilla cake mix
1 1/4 cup milk
1/3 apple sauce (unsweetened)
3 Eggs
Tiramisu filling
4 egg yolks
1/2 tsp vanilla extract
1/4 cup of granulated sugar
475 g mascarpone cheese
Simple syrup
3/4 cup espresso coffee
2 tbsp Kahlua
2 tbsp granulated sugar
Whipped cream Frosting
1 1/2 cups 35% whip cream (cold)
1 tbsp clear vanilla extract
1 cup granulated sugar
Cocoa powder
Step 1

Preheat oven at 350' F. Line a muffin pan with cupcake liners.
 Step 2
In a mixing bowl, combine cake mix, milk, apple sauce and beat with an electric mixer. Add one egg at the time and continu beating until well combined. (don't over beat)
Step 3
Spoon into cupcake liners. Bake 17-20 minutes, or until a toothpick inserted comes out clean.
Step 4
Allow them to cool on a cooling rack.
Step 5
Tiramisu filling
Combine egg yolks, vanilla extract and granulated sugar in the top of a double boiler. (I don't have a double boiler, so I simply boil water in a medium pot and use a smaller metal mixing bowl over it.
Step 6 
Cook for about 5-6 minutes, making sure you stir constantly. *make sure to constantly whisk or else you will end up with scramble eggs* Whisk until mixture becomes thick and a light color.
Step 7
Transfert mixture into a mixing bowl and whip until it has completely cooled off.
Step 8
Once cooled, add mascarpone and mix until just combined. Refrigerate 1 hour before using.
  Step 9
Once cupcake are cooled, cut out the center using a large round piping tip. Fill in the holes with your tiramisu filling.
Step 10
Simple syrup
In a medium bowl combine, espresso coffee, sugar and Kahlua mix until sugar is completely dissolved. Add 2 tsp of the syrup in the cupcake wholes.
Step 11
Whipped cream frosting
Using your electric mixer, whip heavy cream. Add your sugar gradually until stiff peaks forms.
Step 12
Pipe each cupcakes with your Whipped cream frosting and sprinkle with cocoa powder.
