hope everyone had a great week. In this weeks recipe, I will show you how to make a fresh fruit tart. I know what many of you are saying right now, why should I break my head and just buy one at the store? Well, here's why, no baking involve, fresh ingredients and the most important soooooooo easy to make. This recipe is very light and refreshing perfect for a hot summer day. Hope you enjoy!

12 oz tea biscuits
1/2 cup cold unsalted butter
Fruits of your choice
2 cups milk
1/4 cup heavy cream
1/2 tsp vanilla extract
4 egg yolks
3/4 cup granulated sugar
2 tbsp. all purpose flour
1/4 cup cornstarch
Bring to a boil milk, cream and vanilla extract.
In a separate bowl, whisk together egg yolks and sugar until it because light yellow.
Add your flour and cornstarch. Whisk until well combined.
Pour 1/4 of the hot milk through a strainer into your eggs mixture. Wisk until no more lumps. Then, pour the rest of your hot milk and whisk again until well combined.
Bring your egg mixture back to the stove and continuously whisk until it because thick. (Almost like pudding)
Transfert your mixture into a medium size bowl. Cover with plastic wrap and chill for at least 2 hours before using in the refrigerator.
Once cooled, whip the pastry cream with the mascarpone until well combined and refrigerate until needed.
Using a food processor crumble the tea cookies.
Add your cold butter and continu pulsing until texture resembles like wet sand.
Press the dough into your pan and refrigerate for at least 20 minutes.
Gently lift the bottom of your pan ad remove the tart carefully.
Spread pastry cream over your cooled tart.
Fill your tart with fresh fruits and refrigerate. Serve the same day. **You may also make smaller version of it**
