My husband favorite drink during the holidays is eggnog. So why not make an eggnog mousse pudding and give it a little kick with brandy. This recipe is actually very easy to make and perfect for the eggnog lovers. Hope you enjoy!

2 cups eggnog(ready made from the store)
2 tsp of unflavored powder gelatin
1 tbsp. vanilla extract
2 tbsp. brandy
1 1/2 cup of whipping cream 35%
1 pinch ground cinnamon
1 pinch nutmeg
In a small saucepan, sprinkle gelatin over the eggnog. Let it sit for 2 minutes.
Heat the gelatin using a double boiler by constantly stirring. (you don't want the mixture to boil you just want the gelatin to dissolve)
Pour the eggnog mixture in another bowl and refrigerate for 5 minutes or until it has cooled.
Beat the eggnog mixture until it's light and foamy 2 minutes.
Add vanilla extract and brandy. Mix until just combined.
Add whipping cream and mix until fluffy.
Once it starts to be fluffy, add sugar, nutmeg, and cinnamon.
Don't over mix. Your mixture should look like this, runny but a little bit like pudding.
If you over mix
If you over mix, you will get something like this. Pudding with chunks. DON'T WORRY! It's normal because this means that the gelatin started to set.
how to fix itSimply transfert your mixing bowl on top of your double boiler and whisk until the mixture dissolves. This will not take to long. (Do not boil your mixture)You will then notice that your mixture will come back to it's normal shape.
Poor the mixture into your dessert dishes and refrigerate until firm.
Top it with whipped cream. Sprinkle with cinnamon and nutmeg.
